  • 4 large eggs
  • 1 cup unsweetened applesauce
  • 1 cup apple cider
  • 2 cups chopped apples (Granny Smith or Honeycrisp)
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time followed by applesauce and vanilla extract.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Stir in apple cider and fold in chopped apples and nuts if using.
  7. Divide batter between prepared pans and bake for 30-35 minutes until a toothpick comes out clean.
  8. Cool cakes in pans for 10 minutes before transferring to wire racks.
