  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 ½ cups unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 cup unsweetened applesauce
  • 1 cup apple cider
  • 2 teaspoons vanilla extract
  • 2 cups chopped apples (Granny Smith or Honeycrisp recommended)
  • Optional: ½ cup chopped walnuts or pecans

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time and mix well.
  4. Stir in applesauce and vanilla until combined.
  5. Gradually add dry ingredients to wet mixture along with apple cider until just combined.
  6. Fold in chopped apples and nuts if using.
  7. Divide batter into prepared pans and bake for 30-35 minutes until a skewer comes out clean.
  8. Cool in pans for about 10 minutes before transferring to wire racks.
