  • 1 3/4 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 2 medium apples, peeled, cored & diced
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk flour and baking powder together.
  3. In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time, followed by vanilla.
  4. Gradually mix dry ingredients into the wet mixture, alternating with milk until just combined.
  5. Toss diced apples with brown sugar and ground cinnamon in a separate bowl.
  6. Layer half of the batter in the prepared pan, add half of the apple filling, then top with remaining batter and apple filling.
  7. Bake for 60-75 minutes until a toothpick comes out clean.
  8. Cool slightly before glazing with powdered sugar mixed with milk and vanilla.
