8 slices hearty bread (sourdough or artisanal white)
1 to 1.5 lbs thinly sliced deli roast beef
12–16 slices or 2 cups shredded sharp cheddar cheese
6–8 tbsp unsalted butter, softened (divided)
2 tbsp olive oil (divided)
Salt and freshly ground black pepper, to taste
2 large yellow or Vidalia onions, thinly sliced
Optional: prepared horseradish sauce, Dijon mustard, barbecue sauce for serving

Start by caramelizing the onions. In a skillet over medium-low heat, melt 2 tablespoons of butter with 1 tablespoon of olive oil. Add the sliced onions and season with salt and optional sugar. Cover and cook slowly for about 40 minutes until caramelized, deglazing as needed.
Assemble the sandwich by spreading butter on one side of each slice of bread. Layer half the cheddar cheese on four slices, followed by roast beef and caramelized onions. Top with remaining cheese and cover with another slice of bread, butter-side up.
Grill on medium-low heat for about 4–6 minutes per side until golden brown and the cheese has melted.
