  • 4 medium zucchini (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 0.25 tsp salt (to taste)
  • 0.25 tsp black pepper (to taste)
  • Optional: 0.25 cup nutritional yeast for a cheesy flavor

  1. Wash and trim the zucchini, cutting them into 1/2-inch thick sticks or rounds.
  2. Lay the cut zucchini on a rack over a baking sheet, sprinkle with salt, and let sit for 15-20 minutes to draw out moisture.
  3. Pat the zucchini dry with paper towels.
  4. Toss the dried zucchini with olive oil and seasonings (garlic powder, onion powder, paprika, salt, and black pepper).
  5. Preheat the air fryer to 375°F (190°C) for about 3-5 minutes.
  6. Arrange the seasoned zucchini in a single layer in the air fryer basket.
  7. Air fry for about 6-8 minutes, flip them over, then cook for another 5-7 minutes until golden brown and tender-crisp.
  8. Serve hot and enjoy!
